Cooking with an infant.....

Hello all!

Thanks Amy for the cooking magazine.  GREAT IDEA!

Let's start out by saying you have to get a little more creative when you're cooking with a baby.  Here's how you do it....

Once baby is asleep, you rush quickly before they wake up...well worth it though.  These were so yummy.  Dan loves lemon bars and I thought these would be a good change up from the same recipe we make all the time from his Grandma.  (Dan's aunt published a cookbook of all the family recipes so lets say i get a little intimated every time I stray from tradition....) These were well worth it though and one I'll definently make again. 


So here's the before shot.  The recipe said to line the pan with foil so you can just pop the whole thing out when you're done, which worked quite nicely. 


I only used 2 cups of blueberries instead of 2 1/2 cups.  To attempt to make it more healthy I used a sugar free cake mix, low fat cream cheese and margarine instead of butter. They are pretty filling and it made a whole bunch so we had plenty to share with the neighbors.  YUM YUM!
